Peanut Butter Chocolate Chip Cookie Bars…With Nutritional Heft

Though my cookie bars taste like a deviation from the clean and narrow, they are in fact quite wholesome. I make mine sugar-free by using Stevia; but if you prefer, you can substitute coconut palm sugar. These fabuloso bars are perfect for road trips and post-workout battery charges. And if you’re simply craving something sweet…that’s OK too!

Ingredients
  • 1 can chickpeas (drained)
  • 2 tbsp coconut oil
  • 1/3 cup natural peanut butter (or sunflower seed butter)
  • 30 drops Stevia (or 1/3 cup coconut palm sugar)
  • 1/3 cup almond (or coconut)
  • 1 tbsp maca
  • 1 tbsp vanilla extract
  • 2 eggs (room temperature if possible)
  • 1 bag chocolate chips (sugar-free; I prefer Hershey’s)
Servings: people
Instructions
  1. Preheat oven to 350°.
  2. Place all ingredients except the chocolate chips in a food processor. Pulse for several minutes until thoroughly blended, and the batter resembles a cookie dough.
  3. Spray an 8×10 pan with cooking spray and scrape batter into the pan, spreading evenly.
  4. Sprinkle with chocolate chips, pressing them slightly into the batter.
  5. Bake for 25 minutes.
  6. Turn oven off and let sit in the cooling oven for 20 minutes. Remove and cut into squares.
Recipe Notes

Can be served immediately or stored in Tupperware and refrigerated.
