Sweet and Sour Chicken A La Kathie Lee Gifford

I used drained crush pineapple, sugar-free
apricot jam or preserves

Preheat oven to 350. Rinse chicken and cut into chunks. Place in a large casserole dish that has a lid.
In a small mixing bowl, add dressing, preserves, soup mix, and pineapple. Whisk vigorously until blended and smooth, then pour onto chicken.
Bake covered for 30 minutes, then uncovered for another 10-15. Serve immediately. The extra sauce is perfect over rice, quinoa, or orzo pasta.
